German Nachos: Pretzel Nachos with Brats and Beer-Gouda-Sauce

I wanted to create something German-inspired and simple that brings some of my favorite flavors together. Born were German Nachos complete with sliced, grilled bratwurst, quick marinated cabbage, a mustard sour cream and warm gouda-beer-sauce. Lecker!

Ingredients

Pilsner Gouda Sauce

  • 1.5 tablespoon butter
  • 1.5 tablespoon flour
  • 60 ml Pilsner I used Warsteiner
  • 120 ml half and half
  • ½ teaspoon whole grain mustard
  • 1 dash worcerstershire sauce
  • 1 pinch garlic powder
  • 1 pinch cayenne powder
  • 200 g shredded gouda

Other German Nacho Ingredients

  • 1 bag pretzel chips
  • 4 bratwurst links I love the Bavarian Bratwurst from Trader Joe's!
  • 1 yellow onion sliced into rings
  • 100 ml sour cream
  • 2 teaspoon spicy mustard
  • ¼ head red cabbage thinly sliced
  • 1 tablespoon red wine vinegar
  • 1.5 teaspoon olive oil
  • 1 teaspoon sugar

Instructions

  • Grill the bratwurst and onion (I use a vegetable grilling tray for the onion) until slightly charred. Cut the bratwurst into slices.
  • Combine the sliced, red cabbage, vinegar, oil, sugar and season to taste with salt and pepper, set aside and stir occasionally.
  • Whisk together the sour cream and mustard, then season with salt and pepper.

Pilsner Gouda Sauce

  • In a small pot, melt butter over medium heat. Stir in flour and cook for 30 seconds while whisking. Slowly add in the beer, whisking vigorously as you pour to avoid lumps. Add in milk in the same manner. Cook over medium heat, whisking often, for several minutes, until mixture has thickened. Stir in mustard, Worcestershire sauce, garlic powder, salt, pepper, and cayenne. Add cheese and stir until completely melted.
  • On a large platter, spread out the pretzel chips (you can also use chopped pretzel bites!) and scatter all bratwurst, grilled onion, marinated red cabbage, cheese sauce and sour cream sauce over the chips. Serve immediately. Guten Appetit!
