This simple, yet delicious white asparagus pasta salad adds a ton of protein with broth-poached chicken breast. It then gets tossed with a light honey-lemon vinaigrette and garnished with green onion and lots of gruyère cheese.

I don’t know about you, but once Spargelzeit comes around (white asparagus season in Germany aka the fifth season), I can’t stop eating it until I get tired of it and take a break until the following year. 😀 It’s sort of a parallel universe to my relationship with Lebkuchen and Weihnachtsplätzchen (German gingerbread and Christmas cookies). The ladder must be my favorite of them all! I had some recent conversations with my followers on Instagram about growing asparagus in the backyard. We all decided it’s not worth it and to instead suck up the higher price tag (compared to its green or even purple relatives). Did you know white asparagus is harvested while it’s still underground? Otherwise it would turn green! This requires extra work and precautions, but results in a more delicate flavor that I (and all other Germans) oh so love!
Today’s white asparagus pasta salad recipe is so super simple, you’ll be making this over and over again I promise. I think it goes great on its own, so there is no need to serve anything else with it. You also don’t have to necessarily allow for the chicken and pasta to cool down if you’d prefer more of a warm pasta salad. I love the radishes in this salad, which add a nice crunch factor. The chicken is quickly sautéed and then finished in broth for a poached effect. This also reduces the risk that the chicken may dry out.

I love a simple pairing for a standout recipe, especially when using white asparagus, which is really the star of this pasta salad.
The Austrian Schlumberger winery makes an incredible sparkling wine with the Grüner Veltliner varietal, a signature grape that’s native to Austria. It’s such a refreshing wine that has nice fruit and spice notes. It pairs so well with the white asparagus in the pasta salad.
